THAI BITTERMELON OMLET

 

INGREDIENTS
2 small Bittermelons
2 Tbsp Cilantro, chopped
2 Tbsp Tomato, chopped
4 Eggs
1 lb. Lean pork chops*
1 tsp Ground black pepper
1 Tbsp Thai fish sauce
1/4 tsp Sugar
1/2 cup Green onions
2 Tbsp Sesame oil
1 Tbsp Salt

* You can substitute an equal amount of shrimp.

PREPARATION INSTRUCTIONS
Cut bittermelons in half lengthwise, remove seed, and wash to clean. Cut into quarters lengthwise and slice very thin crosswise. Dissolve the salt in one cup water. Add the sliced bittermellon to the salty water and set aside 10 minutes. Finely chop cilantro, green onions, and tomato. Remove fat from pork chops and chop very fine. Drain water from bittermellons; do not rinse. Put bittermellon in mixing bowl. Add remaining ingredients and mix well.

COOKING INSTRUCTIONS
Into a hot, greased skillet, pour the omlet mixture two to four tablespoons per omlet. Cook until slightly brown, turn and brown other side. Remove from heat and enjoy.
